Hey Mike I would skip the champagne yeast, it seems dry for a barley wine already.

Wichita Falls gets some pretty nasty winters also.... I'd be more worried about that than the heat. It will do fine in the heat but the cold may be a problem with out some control.

I think the 1056 at lagering temps would just go into hibernation so it wouldn't do anything.... as for the lagering yeast at ale temps I would do some research and see what kind of flavors it would produce. I have always wondered about mixing 2 ale yeast to see if you could get some...

There's always pressure on your white labs vials and such... Not to mention there's alot of info on fermenting under pressure around here. Relax it's going to be fine.

When you buy 6.5 gallon carboy handles for your 6 gallon carboys and the logical answer is to pick up a couple 6.5 gallon carboys when you go get the right handles.

This shop used to be very good, When I get a chance to make it to Oklahoma city I stop in. This last time I stopped in there were new people there and they seemed to not have any clue what was going on... also they were out of 2 row lol. Not sure if owner has changed or what but this won't be...
