keep in mind simcoe has signifigant terrior and varies year to year. Recent years of simcoe has lost its punch imho. Feel free to play with the hops, however, this recipe did do well with the judges and got a medal in Australia's version of NHC.

I'd stick with cascade. Centennial to me brings a bit of harsh hop astringency in my experience. Hop you enjoyed it! Would love to taste it with mosaic hops.

I need to update this graph. I just got gold at the bluebonnet brew off against 38 other Belgian dark beers. Arguably the highest achievement this beer has had even over BoS. This beer needs age to appeal to American tastes as we're not used to drinking young trappist quads...
Yes we still do a protein rest on Weyermann floor malted. I understand the argument but can't argue the results. Hesitant to change the process on our fest!

WLP 720 is a hoegarden strain used in their grand cru. White labs just selected it as a mead strain because it makes good sweet mead as well. I love this strain and use it in my Trappist singles and Belgian blonds as well with great success.
