    Hearing this from someone else makes it sink in more... maybe it would be more practical to have another port welded in on the side where I could use something less ridiculous. My ultimate goal is to convert this to a peltier setup though -- I'd have to be careful about how I did that.

    I've had some more experience with barrel aged sours since starting this thread. What exactly are you interested in? I'd say in general moving to barrel should wait at least a week or two after primary to make sure the yeast do their thing and clean up, but I doubt you'll really screw anything...
