    Thanks for the helpful info Vale. I was able to use some refrigerated yeast/enzyme/beer to restart a stuck ferm in an Imp Stout, slow working but working! Brut #2 next, will add more beer residue when pitching as you suggested.

    Just finished my first 3 gal batch and it is not very good. Funky fruity smell and higher FG (1.009) than expected using EC-1118. Sanitized thoroughly, 2.5lb corn sugar boiled in filtered tap, used 10g Nutrient spread over 3 days, ferm'd at 68F. Has anyone had funky white wine like aroma and...

    I'm thinking of doing something similar to this from a local orchard's ground apples. Did you pasteurize the cider first? I'm concerned about bacteria getting a foothold before fermentation and producing off flavors or any other issues. Love to hear how these come out!

    Hey Yooper, you are on the right track. I was using a new refractometer, which was recently calibrated. Just tried a hydrometer and it's showing under .994. Lesson learned, don't use a refractometer for FG unless measuring Brix perhaps

    Thanks BigEd! I lived up there for awhile too, back then there was only 1 brewery, Trinity. Still have their growlers rolling around but now they're filled with my beer!
