Just curious .... would a SCOBY from a different area be any different and produce a different Kombucha profile than a local Scoby? Kinda-like local honey's properties vs honey from another area.

My son and I like Kombucha! He would like to make Mead and I would like to do about a 12 liter batch of beer .... looking for recipes!

What do you use on top while fermenting?

If Using RO water with a final mineral cartridge on the output do I need additional water treatment for a LME/DME brew?

Amber LME I have is 1 year old and I have fresh Light DME plus cascade hops and yeast on hand. can I add them together for a 3 gallon brew?

I'd like to go electric and would definitely add this mod. Could I repurpose my Barbour International 44qt SST pot previously used to boil crawfish for this or would there be some off flavor due to seasoning?
