    Flaked Corn, Cream Ale Issue

So is this lengthy cool down period the reason for possible DMS? How do you get the “cold break” they speak of

    Flaked Corn, Cream Ale Issue

I use an immersion chiller......it takes awhile in the warmer months so I chill it down as far as it will go maybe half an hour....then move to the fermenter and put it in the swamp cooler with frozen water bottles and wait until it gets to pitching temp.....always within another 30 min or so

    Flaked Corn, Cream Ale Issue

Grains came from the same place. Hops from different packages. Equipment is always clean. I get RO water from my local Store....But its weird that in IPAs and Stouts I cant taste it.

    DMS cover up?

So if it isnt DMS.....what could it be?

    DMS cover up?

The cream ale was pretty much half Pilsner and half 2 row with some flaked maize. The blonde ales didn't have pilsner malt at all.....and no flaked maize. The veggie smell or cabbage is definitely not what I am getting. I may have to seek out my local HB Club and see if any of them detect something.

    DMS cover up?

So I wonder what could be happening when I brew those other beers that is giving me this slight cornish taste.....when the IPA and stouts do not?

    DMS cover up?

I posted a different thread about a "cornish" kinda taste.....the taste is hard to describe. That thread didn't really yield very much. So I am going to make it a little more broad of a question and start with that, so my question is....would a beer that is really hop forward hide DMS? Because I...

    Flaked Corn, Cream Ale Issue

The cream ale recipe is listed above.....the blonde was just 10 lbs 2 row and 1 lb vienna. Very little hops in either of them. I thought the cream ale off flavor issue was due to the fact we pitched at 80 F. The blonde and cream mash temp was 152. I guess I should have stated above that for the...

    Flaked Corn, Cream Ale Issue

Sorry to keep an old thread alive but, I wanted to touch on this similar "off flavor" I had on this cream ale. I was asked to brew a blueberry blonde ale for a bridal shower. I have since started using the swamp cooler method and have had good results keeping my fermentation temps in the correct...

    NEIPA dry hop issue

I am concerned with my second round of dry hopping.....Not sure the best way to do it. I could cold crash it, then when those drop out I could add the next round? I don't want to put them in and just have them sit on top of the hop/krausen that is already there.

    NEIPA dry hop issue

It’s a 6.5 I believe. Pellets is what’s in there. Just afraid to rock it too much I don’t wanna oxidize it. And I’ve gently done it but nothing has fallen down into the beer. Worried the co2 can’t escape

    NEIPA dry hop issue

This has to be an issue with these beers.....? With the hops hanging on top of the krausen

    NEIPA dry hop issue

Well I swirled it this morning, seemed to have moved some of them down into the beer.....Went home and checked it on lunch at right back up to the top they go. I feel for an NEIPA them not being down in the beer isnt good? Are the oils (biotransformation) still getting down into the beer?

    NEIPA dry hop issue

So my NEIPA is 3 days in so it’s time for dry hop number one. I have always used hop socks to dry hop with. I read that utilization is bad if you use one so I decided for the first time to dump them right in. There was a decent Krausen. They appeared to all sink below the krausen level which I...

NEIPA recipe ?'s and body issue

Well brew day is over for this beer. Everything seemed to go fairly smoothly. I was low on my OG for sure. I wonder if the 25% oats and wheat did it? I wonder with that much of those if a little over 60 min mash was needed? I got high 60's for efficiency. I have always hovered around 70. I may...

What would I be missing? I think that fullness or something close is what I am after.

NEIPA recipe ?'s and body issue

I can get an exact water amount when I get home and can get in front of BeerSmith.......thank you for all your help. This is about the most I have taken out of a conversation on here. Not to dismiss any other help I have gotten. But again, thank you. Always learning!
