    I am lucky enough to have some mead to gift for Christmas! I also printed a 'gift tag' with a 'Hot Mulled Mead' recipe that will be hanging from the wine bag! (just in case they don't like the my mead! lol)

    After fining and adding sulfite and sorbate then....racking off sediment it appears that I racked a little too soon on one of my 1 gal meads (a little new sediment dropped out). I could carefully bottle off of the sediment... but was wondering, if I were to rack one more time before bottling...

    It does appear that my SG is stable, and I will monitor for another few days to verify but, I am concerned about how much free sulfites I might have used up (or might have become bound) by racking off the fluff, etc.. I don't have an SO2 testing kit, so I have no idea of the level of Free SO2...

    SG 1.026 so it looks like things are going relatively well. Sample was test tasted and most of the overwhelming honey flavor is gone. It continues to have bubbling and sparkles on the surface so it seems that it will get to a drinkable gravity (sweetness) level. I don't currently notice any...
