    What are you drinking now?

HB IPA I'd written off as being flat, but after 3 months is perfect.

Amazing what time in the bottle does.

So in January, I brewed my third batch ever. A week after I racked it to secondary and then let it sit until Feb 26, when I bottled and primed it. March 6, for a family party, I pulled it out and discovered that it was dead flat. Tasty but flat. Fast forward to today. While cleaning up some...

My super lazy mead fast mead

I was in the basement today and checked on the bottles. All the dimples that the bottle capper put into the caps are now pimples. Given that its 3 Celsius outside my backdoor right now, all the bottle went outside for a crashing before they become bombs. Now just how to decide what to due...

My super lazy mead fast mead

So I chilled and opened a bottle this evening. And as expected the bottle went fizz when opened. So I guess I've got to chill then down and get onto to drinking. It is a sweet mead but the flavour profile is exactly what I'm looking for. Time to do another batch and let it finish out...

My super lazy mead fast mead

So for perspective, I'm a relatively newbie to mead, even to the drinking of it, so my palate is still developing. I've had two commercial example, both drunk cold. One I loved. The other I wouldn't buy again as it was too light. The flavour profile was much to my liking, but this was...

My super lazy mead fast mead

So my first batch of mead (JOAM, start 11/30/15) is aging out nicely in the fermentor, but that leaves me nothing to drink right now. I've got some beer on the go, but I like the flavour of mead as an after dinner drink. I was going to make some of Bray's One Month Mead, but even that seemed...

    Unusual grain bill

Not that I have a lot more experience that you (having done 3 brews), but I'd drop the Pilsner down to 420g with a full body mash and I suspect that you'd have a very nice mild/session beer.

    Wheat Red Mild?

So I bottled this yesterday after two weeks.. OG was 1.012 which got the beer down as low as I could've hoped. The hydrometer sample was tasty and the beer was a nice hazy copper. Much lighter than it looked in the fermenter. Had a really nice aroma, which based on description was the traits...

Dark Mild Mild Mannered Ale (AG) (E) UK/US

Even though I missed on the FG so my batch of this turned out at 2%, this turned into a delicious brew. First taste, warm, a week after bottling was nice but a little thin. A week later, the next taste at about 50F was very, very yummy. Definitely needed a bit of time conditioning in the...

    Recipe Scaling

While not an expert by any stretch (considering I've done only two brews), would not the issue come down to the Ingredients you chose in Beersmith? If you drive down to the ingredients/Grains, it will list each as having a gravity/SRM. If you're comparing your recipe to someone else's, any...

    Wheat Red Mild?

There was issues with the mill at the LHBS when I did this batch. They got a new one from another shop (setup on a box) and it wouldn't mill anything hard (both the Caramunich and the Wheat). I ended up using their other mill and it did seem to crack the wheat husk, but I likely should've done...

    Wheat Red Mild?

As a note to anyone looking at the above recipe, what is in the fermenter did not turn out red, it's brown. Daughter is still happy though as she says it looks like chocolate milk.

How to store the other half of a dry yeast package?

The fold/tape/store in fridge method is what I've done so far. But given the advice of the manufacterer, I want to try and do the best for my yeast. My range in use is based on Mr. Malty (.2 of a pack) vs Danstar which advise usage of 100g/100L so 5g/5L for my use.

How to store the other half of a dry yeast package?

I've googled for this but haven't found an answer yet, so I apologize if I'm repeating this n00b question. I didn't see a good answer in the Dry Yeast FAQ. I'm doing 1.4 gallon brews with dry yeast. From all the info I've found, it appears that I need about 20%-40% of a package (depending...

    Wheat Red Mild?

Well just brewed the recipe as above with just some slight tweaks (bit more wheat and less pale malt) to meet my ingredients and a small scale back on the ABV. Missed OG badly, was supposed to be 1.041 and reading is 1.030. I don't mind the mild, but the yeast better get the job done as that's...

    Wheat Red Mild?

Thanks for the feedback guys. The Red X Malt looks interesting. I could simplify and just for 50% Pale Wheat, 50% Red X. Would simplify the trip to the LHBS. As well, an Irish Red is in the plans. Biggest problem is so many beers to be made, so little time. This is where it's nice to be...

    Wheat Red Mild?

So my 11 year old daughter has expressed an interested with brewing with me. Now being as that I've only done one batch of beer, I'm a little new on the recipe front and I'm trying to come up with something that meets her appearance interests in the final product. The two criteria that she...

Dark Mild Mild Mannered Ale (AG) (E) UK/US

A slightly modified version of this is in primary as the first ever beer I've brewed. Pale chocolate instead of regular chocolate at a slightly higher percentage. Missed the OG slightly (1.032 instead of 1.035) and the OG sample tasted interesting but it was the first one I've ever tasted...
