    First Wine - French Merlot from Selections International

    I just bottled this kit. I originally made it last July, and after several rackings bottled it the other day. Already it has a nice smooth taste. I think three to six more months in the bottle will age it nicely.

    Get the 6.5 gallon. Then you can use it as a primary and a secondary. If you are trying to save a few dollars, then the 5 gallon will work fine.

    Depends on what brew you are making and what yeast you are using. Different yeasts tolerate different temps. Best thing to do is when buying or making a kit up, look at the yeast you are planning on using and check what temps it will tolerate.

    Is it OK to take a hydrometer reading yet?

    I would wait. The bubbles in the airlock don't mean fermentation is finished. After 7 days if you want to check go ahead, but I like to leave the beer in the primary for 10 days and then the secondary for 14 days. Alot of people leave the beer in the primary for three to five weeks.

    You should use spring water, but I have used RO water from the grocery store with good results.
