    Extra-Light Malt Extract Substitute

    I'm brewing a Belgian Dubbel (Charlie Papazian's Dubbel Your Pleasure) and the recipe calls for .7 kg extra-light dried malt extract. Unfortunately my local home brew store does not stock extra-light DME or LME! I have plenty of light LME, so I was going to use that and lighten it up a bit...

    Slow/stuck Kolsch fermentation?

    I've been fermenting a 5 gallon batch of stout with Kolsch Wyeast at 63 F. I started at OG of 1.049 and after 14 days I was only down to 1.039. Now on day 19 I'm at 1.038, so it seems like fermentation has pretty much come to a stop or is just painfully slow, although the airlock is bubbling...
