    Wyeast 1214 witbier

I went ahead and started it, pitching wyeast 1214 in a witbier (well, the closest I could get with extract and a mini mash). I will let y'all know how it turns out.

    Wyeast 1214 witbier

I have some Wyeast 1214 that I harvested from a Chimay clone. The Wyeast website says that it can be used for Belgian witbier, but I can't find any recipes here where people have used it for witbier. Has anyone used Wyeast 1214 for witbier? Did you like the results? Also, how much yeast...

    Hop schedule question.

So when you say "softer bittering," is that just a function of the shorter boil getting fewer alpha acids out of the hops, or is it more qualitative? Let's say we have two beers. In one, the hops are added at 60 minutes, and in the other, slightly more hops (so that we get the same IBUs) are...

    Hop schedule question.

Sometimes I see recipes that call for adding hops at various times during the boil. As I understand it, the longer the hops boil, the more alpha acids end up in the beer, and the more bitterness. The less the hops boil, the more aromatics from the hops end up in the beer, which contributes...

    Full boil in separate pots

I've done two partial boil extract recipes, and both turned out good, and I'd like to start doing full boils. The problem is that my stove top can't boil 5 gallons of water in my boiling pot, but it can boil 3.5 gallons, and still have two burners free in which I could boil an additional gallon...

    Beer breathing

I've done two batches of beer so far, an IPA and a porter. I just opened the first bottle of the second batch. For both batches, when the beer is first opened and poured, it has a slightly off taste, but after about 5 minutes the taste goes away and the beer tastes fine. Is that normal?

Wort chilling in plastic fermenter buckets

Thanks for the responses. For the people advocating no-chill brewing, are there any disadvantages to doing that? Will the beer clear as well if I do it that way?

Wort chilling in plastic fermenter buckets

I'm getting ready to brew my first beer. I'm going to be using an extract recipe, and I'd like to do a full boil for better hops optimization. I have a plastic bucket fermenter. I don't have any containers big enough to make an ice bath for my boiling pot. I could make an ice bath for the...
