    Chimay Grand Reserve Clone?

I brewed the extract version of this recipe, which seems to be taken straight from "Beer Captured". I used real Chimay Blue yeast. And as one other person commented, it took a LONG time to finish fermentation. Great brew. I do want to try doing all grain soon. Tony

    Chimay Grand Reserve Clone?

The Chimay clone I brewed turned out very good. I kegged 2 gallons of it and bottled the rest in belgian bottles. I've got 5 bottles left. I think they're approaching 1 year old. I need to start another batch to always have some on hand and aged.

    Bottling too soon? Question

Corn sugar and light candi belgian sugar for priming. I know this particular brew is rather sudsy. I just don't want to be exploding bottles. I think I'll wait until tomorrow and just do it.

    Bottling too soon? Question

Brewing up the Chimay Grande Reserve clone from the book, "Beer Captured" by Tess and Mark Szamatulski. I'm near ready to bottle. In the instructions, it says to add another dose of yeast 3 days before bottling. I did that and started getting activity in the airlock. (It has been sitting idle...

White Labs Yeast, may have insects in it.

I get fruit flies in my airlocks all the time. At least here in OH, its the season for those little dudes. They can squeeze through surprisingly small places. Like through the holes in the the lid of a 3 piece airlock.

    Washington RIP Homebrew Heaven (Everett)

Well, dang. I've only ever shopped once with Homebrew Heaven when I was building a recipe and wanted a supplier with most of the grains I was looking for and in small quantities. Maybe it was a specific hop they carried that I needed? I don't remember, but .... dang.

    Belgian + dry hopping consideration

So, I've brewed up the Chimay Grande Reserve clone as described in the book, "Beer Captured" by Tess and Mark Szamatulski. I'm ready to bottle this stuff in a couple weeks. I love a nice IPA and I have grown and vacuum bagged some Cascade and Centennial hops. I was considering pulling a...

Class of '88 Barleywine. I have had some, now I want more...

Was this only produced in '13? If so, I just had a 5 year aged barleywine. So awesome. I'm kinda sad I uncorked it without having anyone around to share it with. I remember having this beer some time back, and it seems like '13 would have been about right. It was good then. It is awesome now.

    Chimay Grand Reserve Clone?

Any variations in the recipe posted at the beginning of this thread? Any other tips you would add? Thanks!

    Chimay Grand Reserve Clone?

I'm interested in the results of those who have brewed this and any variations from the OP recipe. Thanks! Oh, and I'm considering a harvest of yeast from a bottle of Chimay for my attempt.

A moment of silence for my brewery.

Regarding insurance, there is also a difference between flooding from an external source vs something like backed-up drains.

A moment of silence for my brewery.

Flood insurance typically (at least in my case) only covers the home structure, not the contents. There are some insurance companies that will allow you to pay for coverage on household items separately. I'd inquire with your insurer.

A moment of silence for my brewery.

Dude, this sucks. I feel your pain. I lost a LOT in a flood at our house 2 years ago, including two cars. Hadn't started my homebrewing adventures at that point. Though, come to think of it... I used some of the flood insurance money to buy my first Norther Brewer 5 gal kit.

    Dandelions in brewing

Spring has sprung in Ohio and that got me thinking about dandelions. Anyone ever use dandelions in experimental brewing (beer, not wine)? Right now, I'm an extract brewer but I could probably pull off a small batch (BIAB) and try some historical bittering plants like dandelion. At the end of...
