    Yooper - juneberry/serviceberry/Saskatoon wine?

Unfortunately, I never made it. Soon after this post, there were some major life shake-ups and my wife and I have been bouncing back from those. Hopefully this year!

    Roast Chicken With Yoghurt Masala

Hi, Mekchu, and thank you for bringing this thread back from the dead...just in time as we head into summer! I need to try this again, hopefully in the next couple of weeks. Please let us know how it goes, when you make it! Ron

    Chokecherry Wine Yeast Question

Regarding Chokecherry Wine (Prunus virginiana): Has anyone used Red Star's green-label Côte des Blanc's yeast for chokecherry wine - and, if so, how does it compare to Red Star's red-label Premiere Classic (formerly Montrachet) yeast? Thanks in advance - Ron

    Man, I love Apfelwein

Update - this Apfelwein turned out to be pretty amazing...better than any previous attempt. I was surprised that it was do good, considering that it is quite "young," barely two months. From the one-gallon batch, I got 5 bottles; I'll let the other four bottles gather a little dust, and try...

    Man, I love Apfelwein

Thanks, guys - I cold-crashed two days ago (6 weeks) and am bottling today. For this batch, I won't carbonate. This batch was made from Tree Top's Three Apple Blend with added honey. Next batch will be made from Martinelli's and honey. I'm not expecting any appreciable difference, but the...

    Man, I love Apfelwein

I've got a batch that has been in primary since Thanksgiving Day, and intend to cold-crash/bottle this week. My question is, if I bottle this in flippies, is it alright to leave it still, or will I need to carbonate it in order to create a pressure seal? Edit - I'm not sure if it matters or...

Has anyone tried this...and, do you have any suggestions for duplicating it?

Hey, Everyone - I decided to go with 90% Briess Pale Ale Malt (3.5L) and 10% Caramel 40. I considered Briess's Carapils Copper, but it didn't quite ring right. This choice might not be perfect, but I think it will get me very close to what I want, and according to Brewers Friend, the color...

Has anyone tried this...and, do you have any suggestions for duplicating it?

Going to give this a try - I think I have most of it figured out, except the grain bill. I'm guessing 90% 2-row, but any suggestions on what to use in order to get that colour? Suggestions would be welcome - I have the hood and will order the malts tomorrow or Friday. Thank you - Ron

My Adaptation of Kentucky Common Ale

I brewed this again on Sunday; it was an easy brew with no complications, and I think the beer is going to be great, as usual. Two very slight modification, just because.... 1) I swapped the amounts of Black Malt and Caramel 60 with each other, just to see what would happen. Considering the...

Historical Beer: Kentucky Common Kentucky Common Cream Ale

I haven't tried Sterling yet, but I like what I've read about them!

    Berliner Weisse yeast choices

In the near future, I'll be brewing this Berliner Weisse: https://brooklynbrewshop.com/products/beer-making-mix-berliner-weisse My plan is to mash, sparge, boil for a minute, then add lacto and kettle-sour the wort before boiling and pitching yeast, per these instructions...

    Dry Hop - Bad Experience

It looks delicious! I have not yet tried it, but it is on my list. I found out about it a couple of weeks ago, and want to give it a try. I don't know the Croatian names (I only know the Serbian names), but I have tried Lovački Djuveč and Punjena Vešalica, many times. Both were wonderful! :mug:

    Dry Hop - Bad Experience

A lot of people put the hops into a small, sanitized muslin bag, weigh it down with sanitized marbles, and drop it into the fermenter. That way, the particles of hops stay in the bag, but the aroma and flavor are allowed to get into the beer. This might be worth a try. In any case, I am willing...

    What should i do???

All I know is that 3 pounds of honey per gallon gives you a great mead; slightly more for a sweeter mead, slightly less for a dryer mead. My degree is in History, not Math, so I'll leave the conversions to those who are more inclined to the pursuit of numbers. As an aside, I really like D47...

    What should i do???

If you get too elaborate or complicated, you dilute any unique qualities of the excellent honey you are getting, thereby diluting anything special about any of them. You might as well use WalMart honey, which will also work just fine, if you are not going to showcase the terrior of the honey you...
