    Jack's Apricot Vanilla Mead

We use 71b almost exclusively. DAP and Fermaid K for nutrients. We have 30 gallons in 5 gallon batches of grape, apple pie, tart and sweet cherry all in secondary. We may give the apricot a try. We do mostly high gravity meads that will bulk age for about 8 months before we bottle and put away...

    Carboy substitute

If you can't get any there. You can buy food grade ones from Home Depot. Their orange ones are food grade and the lids are water tight. FYI

Fermentation Challenge: Melomel vs Grape Wine

I guess, as with everything, experiences will vary. I have had my brewing room get up to 72 twice while fermenting with 71b. Both times I noticed much more airlock activity and the SG dropping at a lightning pace. The must temped out at 74 and the resulting mead burned like bourbon going...

Fermentation Challenge: Melomel vs Grape Wine

It's pretty warm in Southeast Texas right now so be careful with 71b. It is my go to yeast but it likes to stay in the 60 to 65 degree range while fermenting. Once it hits about 70 degrees, it goes wild and you could end up with rocket fuel that will take months and months to mellow out. If...

    new brewer and loving it!

The 60qt cube ice chests work quite well for an insulator. You can freeze some bottles of water to put in the chest around your fermentor. With just a little practice and timing of the bottle changes, I can keep my fermenting chamber very close to 64 in a 70 degree house. If you are...

How sweet do you like it? The cider FG thread.

Wife likes it around 1.020. I like it around 1.015. I do my best to split the difference at around 1.017.

    Bray's One Month Mead

I started this in a 5 and a 1 gallon on the 9th. I also started a 1 gallon cyser at the same time. Filled the airlocks this morning with vodka. The 1 gallon seems to have bottomed out as there is very little activity. The 5 gallon and the 1 gallon cyser are going strong with a bubble every...

    Apple Pie Cyser

I have been using Madagascar Bourbon vanilla beans and have gotten some very good vanilla notes out of it. I usually just add the bean to my secondary till it hits the flavor I like. The only time I added it to primary, I got some off flavors. JMO of course.

    Bray's One Month Mead

I am getting all of my ingredients together but have one question. I have potassium bicarbonate currently. Can I use this in a 5 gallon batch instead of the potassium carbonate. If so, what would you recommend for dosage?

How many gallons of Mead 2014 Edition!

6 gallons traditional dry mead 5 gallons dry cyser 1 gallon experimental pyment 3 gallon blackberry melomel 1 gallon sweet cyser 1 gallon cherry melomel Wow, that seems like a lot typed out. Gearing up for several more 5 gallon batches. Will add to total when they hit the fermenter...

Vikings Blod inspired mead - Need advice

I bought and tried my first bottle of this last week. I am having a tough time finishing this bottle. I can't get past the hibiscus. It seems way too heavy for me. I feel like I am getting punched in the mouth with each sip. Now, I will say that it does finish with some nice flavors but it...
