    So I brewed a Festbier this weekend and I chilled the wort down to 50 before I pitched the Wyeast 2308. I pitched on Saturday 7-6 and as of today 7/10 there is no bubble activity from the blow off tube. Now when I did the smack pack I did 24 hours ahead of time I did not get tons of puffing up...

    HERMS or RIMS Electric Brewing in the Cold

    I live in Wisconsin and had winter temp problems with my garage. I got RIMS tube made all the difference in the world. Now I brew inside and moved over to herms because I have the controller panel. I think you will find RIMS changes things a lot for you.

    Age it, it will take on some nice notes. First small batched I made, I drank one bottle a month for a year and the one that was the driest was my fave in the end
