pumpkin time... canned pumpkin in the mash or kettle?

I've had the most success with pumpkin in the mash and then in the fermenter. 3-1 or 2-1 on the quantity Mash/Fermenter. So for a 5 gallon recipe I'll use two or three 15oz cans in the mash and one can in the fermenter - end of fermentation. I bake the pumpkin first on a cookie sheet. Sprinkle...

    Stone Xocoveza Mocha Stout

The pasilla chiles don't add much heat at all. It's very subtle. I've even tried to add more than the recipe calls for and they didn't add that much of a boost. I've had the version from Insurgente and it was much better (heavier spice profile, more heat). I think you can use whatever you want...

New England IPA "Northeast" style IPA

Recipe? I've noticed that over the years, my fave NEIPAs used Rakau. Rakau with Citra and/or Galaxy, Vic Secret, etc. Love the NZ hops.

    Fieldwork Pulp clone (neipa) help

Direct from the head brewer from one of their podcasts. I think this is one of their standard recipes. He is a HUGE fan of pilsner malt. They use it as the base for everything (even their stouts), from what he says. 60% pilsner 20% maris otter or GP 10% wheat 10% oats Vermont yeast

New England IPA New England Style TIPA

Hey Dgallo. Are you familiar with the big triple IPAs from Knee Deep Brewing? Simtra, Hop-Trio (Hoparillo)? https://kneedeepbrewing.com/beers/ I have been trying a find a grain bill for those for ages. Hoparillo was one of the first beers I can remember that used the Citra, Mosaic and Amarillo...

New England IPA New England Style TIPA

Beautiful!!! I have been experimenting with the same thing because I can never find much info on TIPAs. I brew on my Grainfather so I will def have to scale this down. Everything looks great. I usually use Vienna and no honey. I will give that a try. Thank you for sharing!!

Hop Help! So I had a mosaic/cashmere hazy and loved it! I decided to do that. Went cashmere/mosaic in the kettle. I was going to hit it with straight mosaic in the DH but I just realized I have no more mosaic. I have these. Please advise! Thanks. Idaho 7 Idaho Gem Sabro Strata Zappa Bru1...

New England IPA "Northeast" style IPA

This was the first time I went half the dry hops a few days into fermentation and half after it slowed down. I also keg hopped. Yeast was A24 Dry Hop and I followed Dgallo’s tips on that yeast. I believe it was pitch at 70 and ramp up to 72-74 over the next week or so. I stopped it early at...

New England IPA "Northeast" style IPA

I recently spoke to a pro brewer and he told me (on a homebrew scale) to barely put any hops hotside at all. He told me a small bittering charge and maybe .5-1 oz WP. Then hit the DH hard w/ 8-10 oz. I need to try it and see if I get similar results. I think this would eliminate the worry of...

I have made it my life’s mission to brew a beer that resembles something from my fave brewery Electric. I could not believe what poured from my keg on Sunday! I finally friggin nailed it in every sense. I cannot believe I brewed this!

I have. I can probably make a better comparison after it’s carbed and ready to drink. However, as far as the yeast performance... It’s been great and I plan on using going forward over Juice.

New England IPA "Northeast" style IPA

Pulled a sample from fermenter... First time using Imperial Dry Hop and malted oats... I am sold on both! This is the most attenuation I’ve ever achieved on a NEIPA. Heavy El Dorado w/ an ounce each of Galaxy and Sabro in WP. DH was Galaxy, Vic Secret, Ella, and a touch of Sabro. The aroma is...

New England IPA "Northeast" style IPA

I thought I had more Citra but I only have some Cryo. Doh! I ended up going 4 oz El Dorado, 1 oz Galaxy, 1 oz Sabro in the WP Thinking of going 2 oz Vic Secret, 1 oz Galaxy, 1 oz Sabro, 1oz Cryo Citra DH What do you think of this combo? Should I drop the Citra Cryo and maybe add 2 oz of Ella...
