    corned briskets were on sale. Rinsed off and pepper garlic rub. Probably should have overnight soak in water as there is plenty of salt. Will make some great lunch meat. Used pellet grill should have hooked up the smoke generator for more smoke.

    The only thing I will note, is that the scotch & coke is not cold - I know a lot of guides say the lower temp will help with the carbonation, but I figured given the time I am leaving it for it shouldn't be an issue. probably the problem.

    thermo pen works great. never used to use one. But now I only buy on sale meat from the store and was getting into too many varieties of cuts that cook differently. so, the 12 bucks is worth it.

    aluminum and salts don't get along when together for a period of time. if grinding for a multi day session i like to put the grinder head in the freezer instead of breaking it down even then the salts still reacted a little with an aluminum auger.

    I have used a 18v cordless drill and it pummeled through a 50/50 wheat/barley. I am considering using an old drills gear box and supplementing to a 12 volt motor (had a motor from a power wheel kids car but can't seem to find it).
