    Everyone finds their own comfort level. But seeing accumulated scuz might motivate a person to up their cleaning game. I run hot Oxi solution through "everything" after each brew day. Maybe I'd do less if I didn't use a pump, HERMS coil and counterflow chiller.

    This is consistent with at least one definition of alcoholism. But, obviously... Even if some of us can drink plenty without becoming addicted, we may be adversely affecting our health in exchange for the pleasure of drinking. alcoholic beverages. That is its own kind of problem.

    Most line supervisors never went to any management school. Being good at a job doesn't mean being good at supervising those who do that job. Reading Dilbert and watching Office Space might be valuable to clueless bosses. Or maybe they can't be awakened from their dreams of power.

    I've never tried pushing/pulling anything except liquid through a long coil. (Conduit with a few bends seems quite different.) My HERMS coil is 50 feet. OP's? It's an appealing thought, trying to get some scrubbing action going. I'm envisioning a brush on a 25 foot stiff-yet-flexible fish...

    Probably. Mostly. Too, this style has strong flavors, thus maybe less of a worry? Best of luck, whatever you decide to do. I wonder why the gravity was so far from predicted, btw. Coincidentally, my second-ever Belgian strong ale is aging in a keg now. I plan to inject priming sugar...

    Of course, if fermentation is just getting started your could add sugar in whatever form now, preferably pasteurized or boiled.

    1.078 isn't awful. Maybe leave well enough alone? Adding fermentables "post-fermentation" will restart fermentation. Not necessarily a bad idea, but do you have a way to do that without introducing oxygen?

    The appearance of the flakes suggests that, over time, some residue has survived your cleaning efforts and accumulated in there. This suggests a more extreme cleaning is needed. You may get some better results by cleaning first with an alkaline solution like PBW, and then an acidic solution...

    Of course, addiction is a terrible thing. Also, there's general alcohol-associated health risks. Quantity advice varies, but even non-addicts may be wise to cut back. Will I live longer, or will it just seem longer?

    Kegging allows half-a-beer pours, which helps me to enjoy variety without excess. But it certainly does not enforce moderation.

    OP takes this a step further: multiple yeast strains and sequenced pitches. Fascinating experiment. Seems like a great test would be to break the batch into multiple one gallon fermentations with differing yeasts or timings. That might be even more revealing than just a single batch.
