    Experts chime in . . .

I am brewing next week. I am trying to duplicate a clean, crisp ale that was strongly flavored of Citra and Simcoe. I know the grains that I must use, but I have no clue the ratio/amounts. The base malt is a 6 row pilsner. Others are: white wheat, flaked oats, and flaked rye. Somebody hit me...

    Building around Falconer's Flight

I have 10-12 ozs of FAlconer's Flight hops in my freezer. I gotta use it up this weekend. Somebody shoot me a malt profile that might be nice for a pale ale or an APA(partial mash). Whatever. I feel like taking risks! I'll use a yeast that I grew from a few bottles of Two Hearted.

    Too Bitter

Just brewed a fine pale ale. It was moderately hoped with Citra and simcoe. It is a wee bit too bitter for my tastes. Next time do II simply back off the 60 minute initial hop addition? 1 oz of Citra to 1/2 oz, or something like that?

Cider /Vineger Smell to My Harvest!

I have been harvesting a Bell's Two-Hearted yeast(from bottles)for the past few weeks in an erlenmeyer. A few days ago - after a solid feeding( 48-72 hrs with fresh wort). I went to put it in the fridge to let it layer out and it smelled of hard cider. Is it ruined. Is it the wort? Can I just...

    Bell's Amber Addition

I took the dregs of four decanted Bell's Two Hearted and added DME. I have decanted and added starter twice in 4-5 day intervals. I just decanted a Bell's Amber Ale. When the dregs reach room temperature, can I add it to my flask? Isn't it the same yeast?

    Quick fermentation?

I am harvesting a Bell's Two hearted yeast. It built quite nicely with the first starter. 3-4 days later(after it appeared to stop) i put it in the fridge. I made a new starter(2 cups h2o, 1/2 cup DME) boiled for 20 minutes - brought down to about 80 degrees. I had pulled the erhlenmeyer out of...

    Yeast Harvesting Question

I've done something stupid . . . Again. I was going to harvest Bell's Two Hearted yeast so the wife and I split a six, saving the bottom inch for collection into a sanitized flask for some DME addition and stir plate aerating. Did almost everything right. After a week I have a nice yeast cake...

    Citra Hops

I just popped the top to a citra ale . . . Boy is it good! Why don't I see more commercial use of citra hops?

    Imperial or Double

What is the difference btw a double IPA and an Imperial IPA?

    Tired of being "close"!

I've only brewed 4-5 batches, but I have been passionate about each of them. BUT . . . I am sick and tired of all of them being "almost" good. I follow the recipes to the letter(they all seem a little "general"), and I always have cloudy beer with carbonation issues. I opened my first bottle of...

    Sweet Potatoe Ale

I am making an Ale(extract) kit and was planning on adding grilled sweet potatoes and spices to the wort at various times. A fellow at a brew shop talked me into buying a few lbs of 3 row to "cook up" with the sweet potatoes at around 150 degrees. I'm ready to do it, but I just don't REALLY know...

    Bottle to fermentor?

I'm clearly a beginner, but . . . I neglected to add water to my wort to get it up to the 5 gallon mark( I was doing an all extract Belgian IPA kit). It has been bottled, but the priming sugar that I used has over-fermented the bottles leading to over-carbonation. Is it a loss, or can I open the...
