    Have you tried a single flavor addition at 20 minutes? I'd make it big with 2oz. or so. Hop flavor seems to shine the best at about the 20 minute mark. Another ounce or 2 at flameout for some aroma.

    I'd brew with it! It looks like a 75% or better crush to me. As for the rollers, a lot of people just leave them. I blow mine off with compressed air just because that's my preference.

    When I was younger, the bar I worked at wouldn't let us tap a keg until it sat for 72 hours. This was to let it settle from transportation and to let the beer stabilize at the serving temperature. Since it sounds like you have enough beer line (wouldn't hurt to know the diameter of the line)...

    How long did you let the keg sit before you tapped it? Kegs need to sit for a while to let everything stabilize.

    10 days is pretty quick. I would give it another 10 days or so at 70 degrees to let the yeast clean up after themselves. Those kit instructions are not always the best.

    When I secondary (rarely) I use a 5 gal better bottle. You could possibly use a 5.5 depending on your batch size. Uziyahu is right, stick with the 6.5 for your primary.

    There are only 3 openings in the tube, so I'm not really sure where the temp probe would go. Maybe add a tee on the outlet?
