    I have used polenta flour in some of my lagers, before. Mostly when I was out of flaked corn. Does pretty much the same job. But best putting it into a brewing bag, as it becomes gelatinous. :)

    Whenever I have made the "Gone with the wheat" kits, it only ever takes about 7 days. Then bottled up and it's been fine. Stick it into a warm area and see if it gets going, again.

    Yeah, I have done a trial test with some before, but it didn't take that long to do. Next time, I will have some patience and get it done. Definitely my next to do. I don't want to use treacle, as it is a little bit like molasses in beer.
