    The instructions state I should put into a secondary, but it's an irish stout. Is it really necessary? If it will help the beer, I'll do it, if not, I'll just bottle. Seems to be no sense in trying to clear an already dark stout, but need help as a rookie. tks

    I bottled it on May 7. Tried one just to check it. Carbonated nicely, but tasted super sweet. Does anyone think this will lose some of it's sweetness by conditioning? I wouldn't think so, but I'm totally new to brewing. Any thoughts?

    Tks. The open slowly advice was a good one. Unfortunately, i missed the starter advice before i pitched it. The ahs instructions said to just shake and pitch it when at room temp. If it doesnt work in a day or so, can i just buy the same yeast and pitch it without any problems?

    Week #2 and the beer has mellowed out substantially. It tasted great now. I'm expecting it to get better next Friday as the smoke flavor continues to mellow.

    I already swirled it with no affect and then pitched more yeast. It didnt move the gravity. As a result, i decided to bottle it.

    I pitched the yeast Wednesday night so it's been about 65 hours or so. I just took another reading. It's still at 1.030. The gravity has not moved even a point. I guess I'll bottle it and see what becomes of it. Maybe it will taste like a mild brown ale? instead of a bock.

    I was hoping it'd mello with time. Its just incredibly smoky right now. I've only tried one commercial scottish ale and that was Gritty's here in Maine. It wasn't smokey at all so I thought I had produced some off flavors.

    My first brew was a Brewer's Best Scottish Ale. It's been in the bottle for a week. Decided to give it a try and it's super smokey. I'm hoping it will mellow. Any one make this recipe and get the same result? It's only a week in the bottles so I'm hoping it's just not ready yet.
