    If I cut back the chocolate malt and black patent to .5 lb and increase the Crystal 120 to .5 lb, I'm coming in at 41 SRM, which is still nicely in the range for a sweet stout. This will be my first stout, so want to make sure I don't rob it of the "stoutiness".

    Just a note, if you're going with 'hoppy = high IBU' then dry-hopping isn't going to do anything for you. Dry hopping adds to the aroma only, no bittering. If you're going with 'hoppy = aroma' then I'd definitely go the dry hop route.

    That doesn't mesh with Palmer (which bases his statements on empirical evidence) at all who specifically states that hops utilization goes does as boil gravity goes up. I don't have the book in front of me as I'm travelling at the moment, but I was just reading that section a couple days ago.
