    Yeah, I have had good luck with extract kits. I think the problem here is freshness. I have no idea how long this was sitting on his shelf. From now on, its all mail order for me. I'll get all of my random stuff from him but the kits will come from FedEx.

    Yeah, I've done some research and that seems to be the way to go. Thats what I get for trying a cheap kit. I thought that I could overcome the dry yeast factor by doing a starter but oh well... It's still beer :)

    I've been using a 1 Liter yeast starter kit since I started home brewing. I'm still brewing extracts but plan to make the jump to all grain next month. My question is, when would I use a 2 liter yeast starter kit? I usually brew Amber and Brown Ales. I do plan to brew heavier beers in the future.

    I have a question that may have an obvious answer but my curiosity got the best of me. If a beer has an alcohol content when ready for bottling, why is sanitation so important at this stage? I thought that the great thing about beer in early civilization was that it prohibited bacteria growth.
