    Lacto and DMS

So I am trying a fast sour method of Berliner Weisse. I mashed around 148 and boiled for 15 minutes, cooled to around 115 and pitched some WLP677. After a day I got a ton of DMS. There's a hint of sourness under it, so I'm willing to salvage if something works to save it. I was thinking...

    Coffee Grounds and Roasted Barley

I brewed an Imperial Stout that had about 7% roasted Barley, which gave it a good, but more intense roasted coffee flavor than I wanted. The next one I do I want to add actual coffee grounds to the secondary. If I do this, should I decrease the amount of roasted barley, thinking it will give off...

    Old Fashioned beer recipe...

Thoughts on this? The chips will be soaked in woodford reserve. Should I add a little vanilla? How much cherry? Aroma hops? The idea is not to have an old fashioned in a beer, but a beer that will remind you and have similar flavors of an old fashioned.

    Calculating OG help!

In my recent batch, a honey wheat, I missed my OG by .019. My OG was 1.03, which I thought was too low for what I wanted, so I steeped .5lbs of caramel 10l in .5 gallons, then boiled and added 2lbs of DME... Added that to fermenter (within 24hrs of fermentation) and it went nuts, but it's quited...
