So being that it's fall and brewing season is returning for me I decided to make a leftover ingredients beer from a few different kits I had laying around. Came up with a dubbel and had some wlp351 so I whipped together a starter. Came home the next day planning on brewing and checked the...

    How long to age?

I have a Belgian specialty ale that once primary is finished should be between 8-9%. My question is how long after bottling should I expect to wait before the beer is ready for consumption. 1 month? 6 months? I plan on trying one every month after bottled and if it tastes good then I guess...

To decoct or not to decoct

So I am planning on making a weizenbock this weekend and am torn on whether to do a single decoction mash or just a single infusion. Seeing a lot of talk saying the decoction is not needed since today's malts are so well modified. Just curious to see what my favorite source of brewing...

Hop combo I am currently in love with

So experimenting with some more hoppy beers. I am not a hophead in any fashion but i do enjoy beers that have a moderate bitterness with a good hop nose. Started with a combination of northern brewer, saaz and tettnanger in back to back batches. Very happy with the profile. Using the...

    All grain apprehensions!

Ok so I have been an extract and specialty grains and partial mash (probably only in my mind) brewer. I have 24 batches under my belt for the last year and a half. I have most of the equipment to go all grain need a bigger kettle and a propane burner to be ready. I recently purchased Gordon...

    WLP380 and WB-06 problem

So I brewed a hefeweizen yesterday that I have done many times but decided to use white labs 380 liquid yeast for the first time. No starter. 24 hours later with no outward signs of fermentation I panicked and rehydrated some WB-06 that I had in the fridge and pitched that. Then I jumped on...

No idea what style I just brewed?!

So being as I am still new to brewing (just over a year into it). After many recipe kits (and many compliments) I decided to try my own recipe. I am still mostly an extract brewer but definately use specialty grains for steeping. The recipe goes like this here. Thanks for your thoughts! 2.5...
