You're correct on the on demand water heater and I totally forgot about my city changed their water this last year and I've been buying water to brew with. They raised the PH of our water for some reason, I can't remember why now. So definitely going with an RO unit. Also i think you're right on...

You're a great tyer! Thanks for sharing. I will have a fly tying station next to my desk. I'm more of a simple tyer, and if it takes more than 10 minutes to tie I buy it. However, I work part time at a fly shop so I get a good discount.
