Octoberfest Lager taking long time ferment

I'd always say to make a starter for the activator packs, even though they say there is no need. And I'll always make a larger/stepped starter for my bocks and other beers I want to lager! It just takes off SO much quicker than without at those lower temps!

    Yeast storage

If you're brewing in a few days, make a starter with it now! No need to store it...let your yeast shag for a couple days and your beer will be all the better for it!

    Lager time and bottling

From everything I've been reading on this subject (I'm also new to lagering and in the middle of primary stage currently): You might be ok since you didn't get the yeast as cold in secondary as many do. HOWEVER, they say it is a good idea when bottle carbing to go ahead and add some yeast in...

    Party Pigs Rock!

Nice! I heard a rumor, maybe you can confirm it if you're still in touch with anybody around there? My waiter told me that Marks had left, and that the "guy who trained him" has taken over as brewmaster. So is Jason Courtney back in town.....have you any idea about it?

    Getting a good hop flavor

Hop utilization, mainly the amount of alpha acids that get dissolved into to wort during the boil, depend on two things: 1) The amount of time they are in the boil, and 2) The Specific Gravity (SG) of the wort in the boil. Pretty much all recipes have the time listed of how long the hops...

    2nd Brew recommendations

I recommend the Liberty Cream ale kit from Midwest Supplies! It was my first kit (needs 2 more weeks in bottles). I tasted it along the way, and after just one week in the bottle, it already tastes great! Nice light amber color, noticeable but not over-powering hop profile, and is pretty...
