What do you do with bad batches?

+1 I'd rather dump a batch than drink something that isn't up to my standards. I don't brew to save money. I brew to make beers that I like, so if I don't like it...seeyaa

pork tenderloin recipes - help me out!

First brown it in a heavy skillet. Then place in a dutch oven or crock pot and add pineapple juice, coconut milk, Thai curry spice and sriracha hot sauce. Cook until tender and serve over rice. If you're in a hurry cut the pork into bite size pieces before browning so it will get tender quicker

    low mash temps, problem?

With those temps you'll have a pretty fermentable beer which should end up pretty dry. So if it's a hoppy beer it will be really hoppy

    Using Gelatin

I wouldn't add fruit and gelatin at the same time as the fruit will restart fermentation

    Orval Starter Culture

When I make my https://www.homebrewtalk.com/f72/drunk-owl-mango-55227/ I always just add the dregs directly to the secondary and I've never had a problem with it working. Although I know it's going to take the better part of a year until it gets good, I don't if using more would necessarily make...

Is it possible for a cooler to be TOO big as a mash tun?

The 165qt cooler is too big for most beers, but 70 qt if you're batch sparging and think you may like to do 10 gallon batches or big(1.110 or bigger) will be fine. The 48qt is pushed to the limit with a 5 gallon Barleywine

Hot Florida - Chest Freezer vs Cooler w/ ice

I've fermented a lager in my garage with the cooler and ice method and never got above 56, or you could spend the money on a probably inefficient old freezer

I hate the taste of cascade! Substitutions?

Here's a old classic http://www.realbeer.com/hops/sister.html that is quite hoppy, and is wonderfully delicious

    The Doors

My older sister saw the Doors at the http://www.whiskyagogo.com/ before their first album. She also saw Janis, Jimi and Cream while living in Hollywood from 66 to 70. I've been jealous all my life

    So What's for Dinner?

Tonight I did beef chalupas with refried beans. Tomorrow I'm doing chocolate ravioli stuffed with roasted butternut squash and bacon sauteed with mushrooms, onions, garlic and fresh oregano

How bad would it be for Canada...

"they have nothing to be ashamed of" I hate that expression at the Olympics. As some of the best in the world, shame has nothing to do with it. Any sports analyst would say the US played waaaaaaaaaaaaaaaaay beyond their talent, which is the true measure of a team. Canada should have won by...

    beef back ribs

Low and slow on a smoker works well, as does low and slow braising in the oven (think of pot roast). I like to braise them in some beef stock with some dried peppers (Ancho, chipotle, New Mexico and guajillo) and cilantro. Pull the meat off and serve on tortillas

    Super Bowl Wagyu Brisket

I cooked 7 lbs of Australian (10-12 grade)Waygu tenderloin for New Years Eve and it was far and away the best steak I've ever had. I did Waygu sliders last week for my son's birthday party and I would agree that while they were great I could get close with fresh ground at home

    Snow?!

C'mon, I lived in Ellicott City when we got 28" a few years back, which was very rare for Md. With getting 3 in one year it should be 50 years til you get another one, so moving will only get you to where they're due for more storms:D I lived in SC before Md and I can tell you they get "black...

    Beer Boycott

I was just playing devil's advocate with my post, so I'll continue to. So it's OK to buy from a large company that has a psuedo-monopoly if they are selling big ticket item, when there are better options that just cost more. All I'm saying is that while we don't have to buy the beers that we...

    Rauchbier is yummy

    Rauchbier is yummy

They have a lager that is fairly light http://www.schlenkerla.de/rauchbier/sorten/sortene.html although no smoked malt is used Revvy----DON"T USE PEATED MALT. It might be good for scotch, but not for beer IMHO. A beer made with 100% rauchmalt, some noble hops and fermented cool with US-05...

    Beer Boycott

So I take it that none of you buy from the major auto companies and instead buy Ferrari's, Bentley's and the like. No major appliance companies either, only the smaller really expensive( sub-zero, Viking etc) brands. Of course we all buy only Marc Levinson Audio home theaters systems.....right...
