    I'm a beer brewer and have only attempted wine a small handful of times. Every time it turned into sparkling wine, and some corks even burst. I usually heat the must in order to kill off wild yeasts etc, and have never used camden tablets. Are those used to prevent carbonation?

    Freezing fresh cider

    It takes a lot of apples and time to press a decent sized batch. I have a small food processor and a small cider press. I don't have that time in one straight shot. So is it possible to freeze the fresh cider in batches over days or weeks till I have enough to ferment?

    I guess I should clarify my question, or maybe I'm not understanding you :) what is the purpose in adding water at all? Why not just press the apples for the juice, add your sugar, acid blend, yeast etc and not add water?

    Yooper, I see that most people crush up their apples and put the pulp in water. I have a small cider press. What would be the difference if I pressed the apples and fermented the juice? Is one way better than the other?

    No I didn't bother. I forgot to sanitize the hydrometer and at that point I figured why bother? It is what it is, and by the way it's bubbling there is bound to be some alcohol.

    I didn't bother checking the gravity since this happened. I went ahead and brewed as planned and have my fingers crossed. Hopefully it's not a waste, I've been looking forward to this for weeks
