Aging on imperial stout soaked oak chunks

Should be ok. The beer will Oxidize a bit but as long as the container is ok then just dump in the wood when you’re ready to start. Pull it and bottle/keg as soon as the oak is enough.

    Pictures of hop plants

Sylvain’s photos are easily the best here. Harvested my Columbus, centennial and Saaz over the last few days. Did a wet hop ale with Columbus and centennial that is happily bubbling now. Not much Saaz on year two with that but Columbus was huge and the centennial started new shoots from the...

Brainstorming - "Quick" Brettanomyces Beers (no sour)

le temps ne respecte pas ce qui se fait sans lui. You have two main options for yeasts from what you mention - a 100% brett ferment or using multiples. Saison yeast is a common one for a co-ferment, as this gets pretty dry to minimize bottle bombs like you mention. You will get more of the...

    Maximizing Barnyard/Horse Blanket

I’ve got a few batches with some strong barnyard Brett in there. The strongest I have showed by about 6-8 weeks and were the result of pouring wort on a 3rd generation roesalare cake. Decent amount of trub and dead things to feed on. Also took some of the same cake and put a fairly sweet...

    What are you drinking now?

A little quick no-boil hazy ipa homebrew with mosaic and citra. Burned out on these a bit so first batch we made but came out well and need to empty the keg to make room. Better than brewdogs versions here and still close to the hoof hearted in town.
