    Recipe Advice

So I too like the grain bill. I have been making great apa's and ipa's with about 10% oats (in this case wheat is perfect) and about 10% carapils. The only thing I would do - and this is me, like i said the bill already looks good- is a full pound of the carapils and wheat along with the other...

Never dump your beer!!! Patience IS a virtue!!! Time heals all things, even beer!

What about a band aid or medicine flavor? Brewed a batch about a month ago and my IC sprung a leak. Water from the hose-in sanitized of course- got in the half chilled wort. I figured I would just go with it but when in tasted it..... Puke. NyQuil. I haven't dumped. I haven't even pulled it from...

I hope you can help me understand....

My guess would be the mineral content of the water from the different breweries. SW may have a high so4 in their water which enhances the perceived bitterness .....

DIPA hop schedule with leftover hops

I think the grain bill looks great. I would consider-and it's really up to you- bittering with the one ounce of Sorachi only ( and maybe the nugget due to its higher AA and because you don't have a lot, though it actually may benefit in the hop stand) and move everything else to the end and...

IPA help - is it the water?

I guess I didn’t realize high biocarbonates end up in bitterness…. I would like to learn more about that. Can you site your source? What is the biocarbonate number one should stay under in order to avoid over bitterness? I just did an APA with a biocarbonate of 109 and total hardness was 294...

DIPA hop schedule with leftover hops

You know I just realized that you have 2 ounces of the sorachi. Only use the one ounce for your ipa. Take the other ounce and divide it as described. I just don't know how Sorachi pairs with citra and amarillo. Not really enough nugget to make a difference. Hell I can't imagine it would be bad...

IPA help - is it the water?

No doubt its the water. I have had the same problem before I started brewing with 100% distilled water. There is a lot of information on this site about using distilled and building your water. A real easy rule of thumb for beginning would be just adding a half tsp of gypsum and a half tsp of...

DIPA hop schedule with leftover hops

I would FWH with the Sorachi, boil for 60 mins. Turn off the heat and take each variety of hop remaining and divide them in half. At flame out, I would toss in half of the hops and let them sit for 20-30 mins. When the temp gets down to 180*, toss in the remaining. Again, steep those hops for...

    Wort chiller leak

Great. Thanks for the reassurance. I read on one of these forums that when a mishap takes place one freaks out. But after 3 or 4 cold ones, the problem doesn't seem as bad as originally thought. That's where I am right now. Brew on:mug:

    Wort chiller leak

So, what I was going to do was raise the temp back to 180, as suggested but then I said "F it". I really didn't say "F".... I was running out of time. After turning up the heat, it got back up to like 140* and I figured that since the ic was in the wort throughout the boil, whatever may have...

    Wort chiller leak

Name says it all... The copper crimped and water from the hole in the copper got in the wort at 120*. Anyone else have this issue? I have no idea how clean the inside of the copper was.....

    Specialty malt for pale ale

I like Golden Promise as a base malt. Ten pounds of that will lend a sweeter taste than the 2-Row. You could also go nuts and do a pound-for-pound substitute of Vienna instead of the 2-Row. There are a ship-load of base malts out there. Plenty of flavor descriptions all over the net, too...

    No hop bags

I get a colander which fits nicely on top of my funnel which leads into the carboy. The colander I use is lined with a screen type of material and is stainless steel. As the wort is chilling, I use my big stainless spoon and "whirlpool" by stirring in the same direction which helps the hops/trub...

Do I need to clean/sanitize my keg

Nothing wrong with hitting it with some Oxy, shake the crap out of it, hook the gas to it, and run that solution through the lines. Rinse with water the same way. Then do the same with StarSan only let the StarSan sit for a few minutes before flushing through the lines. I usually fill the keg...
