    I would probably shoot for a spiced cyser. Cinnamon and cloves lend well to apple as well as honey. However, if you didn't like any of the recipes on gotmead.com, I'm at a loss. They have a lot of mead recipes. The only mead I've made so far is a spiced cyser, but it'll take a bit longer...

    That's what I was thinking as well. That 15 minute boil would extract a lot of essential oils. I think I may go with both your suggestions. Taste it at racking time and if necessary, add a spice tea.

    I don't mark the package with anything. In fact, I've never had someone ask what I was shipping. I've never shipped internationally though. Depending on the country and their laws it could be quite illegal. If UPS was to ask me, I'd just say they were collectibles.

    Not to be an ass, but what does this have to do with the 8-8-8 RIS? :confused: Back to the topic at hand, I think I'm going to let mine bulk condition for awhile and probably bottle it come March.

    I've done the 2 beers/1 water route and it works great. It gets difficult after awhile to remember to drink water, but if you stick with it you should be fine.

    I actually just did a PM version of this recipe last night, but bumped down the ingredients to enter the tripel realm (or Rochefort 8). I really preferred their tripel over their quad. Looked and tasted good when I finished up...now we wait.

    I've never relied on SS being there when the time comes for retirement. I have a decently matched 401K and IRA currently running and I'll have some stock options come up this Spring that I need to look into. Retirement for most of Generation X and beyond is going to have to be self-funded...

    I live about 6 miles from Midwest. It's a blessing and a curse. I can drive there whenever I need something, but that's inherently the problem. ;)
