    After you pitch the yeast into a kit, Throw Away the instructions. The yeast will do what it wants to do, when it wants to, and will finish when it wants to. Timelines given in kits are mostly to be ignored.

    Yeast strain guidance

    I have a generation 0 1968 available, a 1945 smack pack, or the gen. 1 1968 yeast cake under a batch of caribou slobber (yet to be bottled). I have a habit of doubling starters on the stir plate for future use.

    First batch of caribou slobber, is looks a little off color to me

    I brewed this 3 weeks ago, had trouble getting it up to 170° on my stove. It was blacker than night when it finally did. Haven't bottled yet, but I don't expect much change. I finished brewing with a burner, no more problems.

    Planning on brewing an EPA this weekend, and have a choice between wyeast 1945 Neobrittania and 1968. SG 1.056. As a old/new brewer, I don't have a lot of experience with liquid yeasts, and am seeking guidance from those more experienced on the issue.

    I stand corrected. But their fragility remains. In my case, the aftermath of a shattering glass carboy was Quite enough to convince me to never use one again. Not worth the pain, or the stitches.

    NOOB question

    Not a bad kit, nut it doesn't include a hydrometer. If you got the glass version, be Very careful. Else, expect large shards of glass at random moments. As for gravity, see below: http://en.m.wikipedia.org/wiki/Gravity_(alcoholic_beverage) Edit: Oops. At least we were on the same page. Lol

    Cleaned and delabled 5 cases of bottles, with another 5 waiting in the wings.

    Want to move to 5 gallon brews...

    Took advantage of AHB's fermenter sale: a 7.9 gal. Pail and 5 gal. BB, with stoppers and airlocks, for $29.99.

    There probably isn't much difference, either way, as long as it boils.

    Dextrose = corn sugar = priming sugar. Same thing.

    I've had the best results adding dme to water, mixing with a large clean spoon. Then, add to your brewpot. Just remember to account for the water/dme mix water to your boil. Say, you're going for a 2 1/2 gallon partial boil. Steep in 2 gallons of water. Add dme to 1/2 gallon of water. At the end...

    Avoiding the clump

    You can add your dme to a gallon of room temp water, preboil. It dissolves the sugars, and eliminates having a sticky bag/clumps from the steam. And, no added foam during addition. It worked well for me, last brewday. Water volumes can be adjusted to fit your needs.
