    Primitive/Improvised Methods Beer

I love this thread. I have used open pit w/ mesquite, and never got smoke into the beer. I would try dipping whatever local fruit is available into the wort for a wild yeast. +1 on harvesting yeast from a commercial beer if that doesn't break the rules. I don't like the use of plastic, but I'm...

Looking for a dry DIPA without corn sugar

White labs says in the description of that yeast that it leaves residual sweetness. I like WLP011 when I want to get a nice clean finish (but it also says low attenuation). What is the extent of your exp with yeast? If you haven't tried a lot, you will be very surprised at the effect that they...

Are you able to suppress an ale yeast at lager temps?

was the hefe yeast a starter? If it wasn't i would doubt you would get much from it. I would lager the batch and hope that it would have a little banana note as opposed to a lot of banana.

What craft beer do you secretly despise?

Sam Adams chocolate cherry bock makes me sick. Or at least made me sick the one time I tried it.

Are there noticeable differences for cold crashing longer?

Yes same effect when in the keg. The more flocculation characteristics of the yeast combined with good hot and cold breaks will effect the time it takes to clarify too.

    Yeast washing

You can always shake it then decant after a set amount of time. you could at least cut out half of that trub

    Low OG cider?

Yes right. Corn sugar will certainly dry it out and give it less flavor. I haven't looked at sugar content of those cans. Your volume raises with each can. Plus watch preservatives.

    Low OG cider?

I would add sugar because I like a buzz. But you will be happy with the results if left alone as long as you like light cider. If you add sugar use a calculator. Don't just dump a couple pounds and hope for the best.

Try Vinegar for Oxyclean rinse as well as brush marks on glass

I was having trouble getting oxyclean residue out of my carboy. I would always see little white crystals inside and mostly on the bottom of my carboy that would be a giant pain to scrub. I tried white vinegar with an equal amount water and was amazed. It worked the best in a carboy cleaner...

    Cold press coffee

I buy 32 oz of cold pressed coffee concentrate from Whole Foods and add the whole thing to 5 gal at bottling. I used Yooper's Oatmeal Stout recipe and it came out great. Lots of coffee flavor with no off flavors that come from a poorly brewed coffee. Of course a lot of people want to brew the...

Craft The Perfect Draft - Grow Your Own

I used one vile of WLP011 European Ale Yeast in five consecutive batches with each yeast cake being washed with beer and stored in the fridge for at least a month at a time. Starters started fast.

Craft The Perfect Draft - Grow Your Own

I prefer to wash yeast with beer and keep a whole mason jar or two in my fridge. Its very easy to decant. Just shake the yeast cake up, pour in to as many jars as you can, let sit for an hour, decant off the trub, repeat and put in fridge. Sanitizing water for this is not necessary. You don't...

    Spend my $400 on upgrades!

refractometers are great too. DIY stir plates are very cheap and a great thing for making yeast starters. Once you get into starters, you will never go back.
