    By that logic, carboys used for homebrew would be near impossible to get clean again..??

    Why feel bad? You'd be helping him improve his business. He works for you, if you're unhappy with something bring it up (in a constructive way) if he doesn't like it or is unwilling to change, take your business elsewhere.

    Blow Off Tubing

    I use 1/4" ID on one of my carboys since that was all the tubing I had around at the time - haven't had any issues thus far over a half dozen brews or so. Have one blowing off through it now, no problems. My other carboy has a 3/8" ID tube, probably overkill. I wouldn't sweat it.

    Style you will never brew?

    Belgians or Hefe's. I really try to like them, but can never get through more than a sip or two of every one i've tried. The girlfriend likes them, so maybe i'll make one if she asks and just not drink it. Or break up with her. To be determined.

    That's the plan - but as a man of science I started with the suggested amount and will dial it back until there's brewpot anarchy again, then split the difference. This is going to make solo brew days that much more enjoyable.

    Caramel Amber Ale today. Might do something else tomorrow or Monday, maybe a Blonde. I've got an APA on tap and a Porter wrapping up fermenting.

    Fermcap is ruining my brew day

    12 drops in just before boil. No more screaming to my brew partner when it starts to boil over, panicking trying to find the spray bottle, or trying to stir and spray at once while dialing down the propane with my foot while holding a beer. Now I just sit there and drink, staring at it...

    Had quite a few pints up at Faultline - not a bad spot. Pricey food, but i'm expensing meals and a beer (or two) to the company. The best Santa Fe Chicken Sandwich i've had in CA though. Beers are solid enough, if I was here for two weeks I would have picked up a mini-keg of their IPA for $25...

    Hit tied house tonight, pretty solid food and beers. A little let down they were out of their "citra" which I was looking forward to trying, but the ipa was pretty good. I think I'll head up to east bay to check those other ones out tomorrow. Thanks for the suggestions!

    :D Go off gravity readings - keg once those are stable. You can always age it longer in the keg if it's not quite ready yet, gives you more space to brew

    I brewed this up three weeks ago, just took a gravity reading and MAN does this sample taste good. I've never tasted the real zombie dust, but I sure as hell like this beer. Going to pick up the hops for dryhop tomorrow, keg it in 7-10 days.

    Need an immersible probe for my thermoworks oven thermometer

    I had a cheapo oven probe that I just coated the metal/wire connection with high temp silicone. My brewing buddy bought a fancy waterproof one that same weekend, we've been using both and mine is still spot on after 7 or 8 brewdays. Might be worth giving it a shot, $2 of silicone vs a new probe.

    Blonde Ale Centennial Blonde (Simple 4% All Grain, 5 & 10 Gall)

    I unknowingly unhooked the line from the manifold of my keg before bleeding off the 30 psi of pressure from force carbing and got treated to a nice shower of Centennial Blonde straight to the face, before packing up for the wedding. It sure tasted pretty good.

    I'm using the Williams Brewing kit with just a regular o2 tank from a hardware store.

    Checked the gravity today - 1.013 after 6 days, 4.99% abv. And tastes REALLY good. Gonna measure gravity tomorrow and Sunday, will keg and force carb if it's all done then so it's ready for the wedding next weekend. Hell, I could drink it as is now. PSYCHED.

    Fermenting 10 days and still going

    Same here, IPA bubbled away for just over two weeks. First time i've had that happen. I was curious about it, but what are you gonna do? It'll finish when it finishes.
