    The thermoprobe situation is a manual solution, two thermowells, and move the probe. I understand the 25A rating for the selector switch, but why do I need a second selector and contact? The switch will be on the hot side of the circuit so shouldn't that be all I need?

    I'd rack it if it's been four days of steady gravity. The hydrometer is definitely your best indicator for when your done primary.

    Mashing longer to compensate for too high a mash temp?

    Extending the mash won't change it. Once you've denatured the enzymes, their done. So basically the remaining enzymes will convert what they can, then stop. You could leave it for five hours, and it wouldn't convert anymore than it did in that first hour.

    A full port shut off valve for the working end of my garden hose. No more running to the spigot every time I need to turn the water on and off.

    Deadspace is a quick find. Fill the cooler with a couple of inches of water. Put in your false bottom and drain. Once it's done, close the valves and measure the water that's left behind. That's your dead space!

    Plan for more time. It takes more time to heat more liquid for both mash and boil. Chill obviously will also take longer. Other than that there is very little difference (imo) between five and ten gallon batches.
