    To drink while brewing or not to drink.. That is the question

    Prior to brewing, I carefully measure everything out and print out my brew steps. I have my iPad with brew smith timer going also. At that point it's pretty hard to screw up so I drink away!

    Frozen

    I froze one. Not quite a solid block, but not far off. I bottle conditioned it and didn't even repitch - turned out great but was slow to carb up. Thankfully, mine was in a bucket.

    If using real fruit, I would let it ferment out, and then rack it on top of the fruit in a secondary. Be sure to sterilize your fruit.

    There are a LOT of ingredients loaded into Beersmith, but it's not realistic to expect every ingredient available to be in it. I've had to add some things at times. Also, not all the numbers are dead on nuts. I've had to adjust some things like srm, alpha%, etc.

    I bet your beer is doing just fine. Relax. Believe it or not, after some more brews you'll have the relax thing down and sooner or later you'll forget u even have one in the fermenter for longer than u planned - and it will still turn out just fine most likely.

    Oh, and I usually gelatin and cold crash prior to bottling. It really helps to ensure a crystal clear beer.

    Nah, don't worry about secondary. Just leave it be.

    I find no reason to rack to secondary. Just let it ride in the primary unless adding flavoring, then I use a secondary. And for my airlock I use vanilla vodka..... Smells great and works fine.

    What was the OG? What yeast? Forget about the airlock as they are poor indicator of fermentation. What is the gravity?

    I ordered the yeast, but haven't got it yet so I don't know the date. I have it put into beersmith, but it needs a date still. Putting in a date of a few months ago came up with that size starter but I can adjust when I know the actual date.

    LME brewing time

    Oh, and 1lb of Lme does not = 1lb of dme in case u are not aware. I calculate 1lb Lme to equal .8lb dme when converting.

    Oh, and adding sugar as suggested could up your alcohol, but will likely dry it out.
