    Adding tangerine juice to secondary?

    As far as I know the Campden won't "sanatize" the juice, it will just kill the wild yeast, which is still beneficial for you. But there is a waiting period before you add the juice post campden. But totally go for it. A tangerine wheat sounds refreshing.

    There's tons of factors for why you didn't see a intense fermentation, none of them are reasons to worry. Stick to your normal schedule, everything is probably fine.

    Unfortunately no. Mostly bread comes out of the Hobart. That and ground beef for burgers. It's a special day when we can make sausage. Although part of the masochist in me wants to do a bratwurst special on the roof top bar.

    If you have the funds, it's always handy to have a Sanke tap, just incase your having a party and don't want everyone to drink your precious HB, especially if you have the manifold space.

    It's either a 60 or 80qt hobart. But we form the emulsion by hand. 2 people, 2 wooden spoons. Stir like crazy.

    Sorry...no pics...Next time, I'll get one...Also, try a little milk powder. It helps with the emulsion. This is all assuming you can get an emulsion with your recipe. I'm no expert in charcuterie, I just know that I was told if it falls apart I failed with my emulsion.

    That's my first guess. You don't have to grind it smaller, just mix it longer (we leave big chunks of unground meat and fat in ours). I don't know how to describe when the emulsification is done, but whenever you think it's done, go for 5 minutes longer. I'll see if I can dig up a picture.

    Apfelwein yeast choice...

    I believe the reason you don't see as much of a yeast cake on Apfelwein is because there is just not as much trub and what not in the carboy, so I'd have no problem pitching on top of the cake.
