    Top off with tap

    In the few partial boil extracts I did when first starting, I always topped off with straight tap water. Although, my tap water tastes great. YMMV, if you don't drink your tap water use bottled.

    The only issue I'm encountering is really no way to ensure 60F for 6-8 months with only a swamp cooler and many other brews in the pipeline. But, I could easily allow for it to sit at room temp (60-68F) for 8 months no problem. Will that cause any issue?

    One Gallon Batch Yeast

    Been brewing 5 gallons for quite some time now, looking to scale it down allowing me to brew on a weekly basis and experiment etc. etc. I'm wondering how much of a dry yeast packet should I pitch? 1/5? If so, what to do with the other 4/5? Can I store it somehow for a later batch? If so, how?
