    Thoughts on LHBS and restaurant

My LHBS, after being open for 20+ years, expanded their operation to include a brewery and taproom (Veracious Brewing) and was rated one of the Beer Advocate's top new breweries in 2015. They don't serve any food, it's all bring-your-own and food trucks outside, but this allows them to focus on...

New England IPA "Northeast" style IPA

Thanks, Braufessor! Pulled a sample yesterday (3.5 days) and it's at about 1.022...planning on first dry hop tonight. Looked amazing, smelled good, but still tasted like a yeast factory.

New England IPA "Northeast" style IPA

I've been trying to follow this recipe & process as closely as possible. I'm on day 4 of fermentation today, but I'm trying to figure out my plan for dry hopping because I don't have the screen for the purged-keg method described. I do have two empty kegs, I just don't have the filter screen...

New England IPA "Northeast" style IPA

I'm using tap water, not RO water, and targeted 125ppm Chloride and 75ppm Sulfate, so my additions were a little different. Got a water test about 6 months ago and adjusted based on Bru'n Water with Gypsum, CaCl, and lactic acid. I know the test strips are not the most accurate, but at least...

New England IPA "Northeast" style IPA

Brewed this over the weekend using 1318 and 2:1 Citra:Galaxy hopping on the same schedule as the original recipe. My mash pH might have been a little low. The best I could tell with the test strips is that it was between 5.0 and 5.4. Nothing to be too worried about, but I was shooting for 5.35...

New England IPA "Northeast" style IPA

Sounds like I can't go wrong, so maybe the best thing is to stick with what I've got planned (2:1 Citra/Galaxy), see how it goes, and try something else next time. Worst case is that my wife isn't feeling it and I have to drink it all myself. Thanks for the suggestions.

New England IPA "Northeast" style IPA

What would you suggest if I were to cut back on the Galaxy? Mosaic?

New England IPA "Northeast" style IPA

Thanks...I will probably go with this combo for a few reasons: 1)That's what I have on hand, 2)I've used a lot of Citra in the past and it's never failed to make a good beer, and 3)When we visited Treehouse, my wife had their Bright w/ Citra and this is the beer that converted her to an IPA...

New England IPA "Northeast" style IPA

Thanks Braufessor. I'm not worried about making the galaxy last...I've already got more hops than I have time to brew with! I've never used galaxy and only used mosaic once (and it wasn't great, probably because I forgot to add the lactic acid), so I don't know what these hops contribute. Also...

New England IPA "Northeast" style IPA

Hello all, I've been planning on brewing this beer for a while. Even bought the ingredients almost 2 months ago, but a 7 month old and living room renovation have my wife giving me the "you're not brewing this weekend" look. But it looks like I have the green light for Saturday! Have all the...

    CT Brewers Check-In

I knew they had a few strains in their coolers but didn't know they had more in the back. Good to know if I'm ever looking for something specific to White Labs.

    Brew Years Resolutions Update

Two months in, I'm curious how everybody's brew years resolutions are going. Are you sticking with it, have you lapsed, or have you changed course? I had two resolutions, one specific and one a little more vague. The first was that I would run a mile for every beer that I drink...motivation to...

New England IPA "Northeast" style IPA

That's a good question I hadn't considered. The note attached to these cells (that say 29 and 55) indicates "The concentrations shown....are the final concentrations in the kettle. These concentrations may not always reflect the concentrations below since the sparging water concentrations may...

New England IPA "Northeast" style IPA

Thanks. Unfortunately I only have pH test strips, which I know are not very accurate but will have to do until I have money for a pH meter. If Brun Water is suggeting that I add 3.5mL to the sparge water, why do you think that 1mL is sufficient? Any reason not to add 3.5mL? Thanks again, John

New England IPA "Northeast" style IPA

Hey all, Planning on brewing this recipe (scaled up to get to about 6% ABV, and I'm thinking of a Citra/Galaxy combo) and wanted to ask if my planned water adjustments look OK. This is only my second batch with water adjustments and my first wasn't great, mainly because I forgot to add the...

Results from first brew with water adjustment...need some help

OK, will do! Thanks. Seems everywhere I turn to learn about water, people have different advice. Others have lead me to believe that the ratio was more important than the actual numbers, but given my lackluster (but drinkable!) results with my first attempt, I'm willing to try another route...

Results from first brew with water adjustment...need some help

Thank you both for the feedback. If I brew this again, I'll lose the baking soda and be sure to add some acid to bring my mash pH down to 5.4. One last question: I added a total of 10.7g of gypsum, mostly to boost the sulfate:chloride ratio with the additional effect of increasing calcium. Is...

Results from first brew with water adjustment...need some help

Martin, Thanks again for your help. With the lactic acid, the pH would have been 5.52, and I added the baking soda to increase the sodium since without it my sodium level would be 7ppm and target was 25. This also brought the bicarbonate up from 50 to 98, closer to the 110 target for the Pale...
