How to make a hot/fusel tasting beer... on purpose

I'll support this and be more specific. Underpitching a weak yeast that has lower alcohol tolerance, or using "turbo" yeasts to rush a warm fermentation on a relatively high OG wort will work wonders in producing fusels. You'll see this a lot in lower ABV macro lagers loaded with adjuncts...

    Post your Christmas Brew-gifts

Posted a picture or two to the "Cat" thread. One gift was a humorous, asocial cat and beer themed t-shirt. It made me laugh pretty hard and will be wearing it the first chance I get. The other great score was an imported 5 liter mini-keg of Delirium Tremens Belgian strong ale. Both are just...

    How’s my water?

When I was a kid in Indiana, our local groundwater was loaded with iron, carbonates, and sulfates. The sulfate content was so bad the water literally stank and boiling it, then cooling it off would yield some nice lime nodules in the pan. The Old Man decided it was time for a water softener...

North American Oktoberfest vs German Oktoberfest

Agreed. My former "go to" retailer couldn't sell the 28 bottle cases of Crystalbombs he had in stock last year, even when he dropped the sale price. A couple years back a guy ordered some O-fest Wiesn and neglected to pick up the cases the distributor dropped off. I saw them and promptly took...

    How’s my water?

The TDS (total dissolved solids) level alone would scare me just looking. I think there's definitely a water treatment and filtration setup in your future if you can afford it because the dissolved mineralization (salt level) is through the roof!

North American Oktoberfest vs German Oktoberfest

Paulaner Oktoberfest Wiesn and Marzen are two of the best German import beers you can find. The Wiesn is seasonal and possibly the best festbier I've had, while the marzen is year-round and a great example itself. Last year one of my boys bought me some of the Salvator Doppelbock and...

Opinions on German Pseudo Pilsner recipe?

I agree. S-189 is a well-known dry lager strain that shouldn't leave as many esters as S-05. A warm and fast ferment with S-05 might give you some fruity essence you wouldn't want in a pseudo-lager. S-05 makes a darned great summer wheat ale, though!

Opinions on German Pseudo Pilsner recipe?

Four to six ounces per 5 to 5.25 gallon batch. A water pH of 8 is typical with city water because it is high enough to prevent pipe corrosion. I don't use my city water due to chlorine/chloramine, so I purchase "soft" bottled spring water at the store. For pale or lighter-colored beers I...

    Favorite/Worst Cheap Beer?

Retail commercial beer here in NJ is getting outrageously expensive lately. Who the f-ck pays over $12 a six, seriously? This why homebrewing 5 gallons at a time pays off, even if it incurs some labor. Favorite commercial lager I can't afford anymore - Founders Solid Gold (Went from...

    Cats

My two are underfoot constantly. Dragging potatoes out of the bag and rolling them across the floor. They eff with the dog by tapping him on the head with paws while he drinks from his water bowl. They steal his toys or attempt to raid his treats and training snacks. The dog is trained to...

    Cats

Festus, doing what he does best - sleeping. He's not actually a pure Bombay or black cat, he's a mix. His fur is actually a deep, dark chocolate with barely visible darker stripes you can only see in bright sunlight. We're feeding both kits a mix of dry and wet food along with chicken...

    Cats

Meet Festus and Mara. I got them from the Ocean County Animal Shelter as stray kitten siblings. There were three siblings, I took two. Teddy, the third little one, was already wanted by multiple people so I took the others - and glad I did. They are well-socialized little cats at just over 4...

    Cats

I love the black cats. Matter of fact, after my Mr. Poo passed on April 1 I got one ... well, actually TWO cats, but only one is black. They are siblings. The male is black, the female is dilute gray torti. Great animals ... absolutely happy to have them. I will post pics after downloading...

    Worried about my fermentation

I would say that was worth the wait. Looks nice and the carbonation is great - small bubbles with an excellent foam density.

    Head retention

Here's my two cents. It involves hop oils, protein, and temperature. Beers that have a moderate amount of hopping and have a protein component tend to foam and stay that way, especially if they're served slightly chilled or at room temperature. I've played with serving temps a bit and found...

    Anyone with experience with WLP029?

I've used WLP029 at ambient temps near 59-60F with no real trouble. My method is to use a pitch a nice 500ml starter using liquid yeast, and a weak solution of wort left to sit for about two hours before pitching. Starting gravity of my beer wort is 1.050 or less and it finishes off nice and...

A brew to age for 18 years

The brewing adventure in my house started with cider and mead but it was impatience that happily led to beer. The oldest beer I made was a partial mash mild amber ale near 6.6% ABV. It aged just over a year in capped brown bottles and didn't survive more than a few weeks of drinking. The foam...
