    Yeast Starters

Depending on the beer and the OG I am seeking I will often start building a starter 14 days in advance. Thus giving me time to add an increasingly higher gravity wort to the starter several times and grow more and stronger yeast.

    Quick qestion about oats

What has been described here is something I have been doing for a while now and it is in fact called a Cereal Mash! I use it in a stepped mash schedule. It is not complex, however an understanding of grain (or grass as all cereal grains are) is essential. 1. Not all grain starches are equal...

    Sealing Bottling Bucket Hole

I understand being frugal and re-use - recycle - re-purpose but why would you risk it? Leaks and infections in the cracks and creases. 6.5 Gallon fermenting buckets with lid and grommet can be purchased for $15.00 or less. It is my opinion that preventing an infected batch is worth the price of...

What's the worst craft brew (commercial) you've had?

Dogfish Head 120 Minute IPA I purchased a 4 pack ... opened one and poured. One sip and down the drain it went as well as the 3 other bottles. Was like drinking liquified 2 month old cat box smell. I think they use Citra Hops ... I just can't stand Citra Hops ick!

    Krausen Dilemma...

Fascinating... I disagree what the book says about "off flavors" and I am positive that you should not do this.

    Krausen Dilemma...

Never heard of removing krausen? -- I do know that large breweries will top crop their krausen to get the yeast. Never removed krausen from my buckets? I would say DO NOT DO THIS Where did you read this?

    Made my first IPA...dryhop help/suggestions

You can get some citrus aroma from CTZ (Columbus, Tomahawk, Zuess) and from Centennial and Cascade and Citra and Amarillo. Dry hoping will get you aroma only it will not add much if any citrus flavor. There may be the "appearance" of citrus flavor as your nose fools your tongue into believing...
