    1. How long is "a few weeks" and 2. Sounds like a capping issue if some were fine and others were flat but tasted fine.

    You can get a ph test kit from anywhere that sells pool cleaning supplies. I'd mix it with a tiny bit of water just to make it take onto the litmis(sp) strip.

    brewed my first batch of beer last night!

    With my bottled beers, letting the sediment into my glass has caused some off flavors and made me extra gassy, but thats about it. As with all things you won't know until you try it. If you don't taste any off flavors, drink it, thats a good half sip worth of your beer.

    Does anyone have any experience building a kegerator from scratch? I got a cheap little mini fridge and was thinking of building a cabinet and moving the compressor and coils and all the pieces from the fridge to the cabinet.

    Why I Went Back to Extract This Summer

    2.5 gallons in a 5 gallon bucket

    I'm going to say yes, as my last brew was an IPA racked onto about 8lbs of oranges, cherries, mango and cranberries. It came out wonderfully weird. No oxidation problems from what I and others that have tried it have been able to detect.

    You would run the same risk of infection with your starter as a normal 5 gal batch to just let it cool as it wants. Cooling rapidly and pitching gives the yeast you want in there the best chance to become the dominant species in the wort.
