sounds good, or if you've got an awesome dishwasher like mine, load it up and run a cycle with no soap and make sure you have sanitize turned on. Or run it twice, once with and once without soap. I can fit all the bottles I need for a full batch except for 6 into the dishwasher:P

Plastic is easy to handle, move when full and replace, but it scratches and stains. Glass is easy to clean, doesn't scratch, but is much more of a pain to move when full and is more expensive to replace. You just pick what works for you.

Do whats used then, measure and mark what is being used. "Cold" side of dipstick for water going into kettle, hot side for pre-boil after the mash to double check and mark the level on fermentors at Pitching temps.

Now I know what to do with the two legal file cabinets that were in the basement when we moved into this house, one is a "fireproof" model with the concrete/cement walls so I know it won't tip over even if I manage to fill it with full bottles.
I primary in buckets and secondary in carboys, just how it worked out. I secondary all my beers, and the 2 reasons I do: 1. Its the way I learned how to brew and 2. I lets more stuff settle out of the beer after primary is done, and all that stuff makes me get stomach cramps and headaches. If...
Not sure about the making only one starter, but it seems like pitching them at the same time would be better, otherwise one is going to have taken over and not leave room for the other. I would pitch as even amounts as possible, and at the same time.
I'd keg the wit and IPA, and just let the stout condition till ya finish one off ;) least thats what I would do. I would probably bottle the Wit if I had to bottle one though
She's ok'd the fridge, even knows where I'm going to put it. Its having it working and something in it before the first round is over that might be the catch. I'm pretty sure she wasn't expecting me to be pourin' so soon. ;)
