    What's in your fermenter(s)?

1 gallon of berliner that i racked onto prickly pear. Its a beautiful pink color and most of the fruit has already sunk to the bottom. Should cold crash easy. 1 gallon of berliner that went onto a berry/cherry blend. Its a deep purple. Lots of gunk on top that hopefully will fall out easily. 5...

    Using coffee in beer

I recently brewed a porter with coffee. I "dry beaned" in the primary, which imparted a lot of aroma but I thought kind of lacked in flavor so I cold brewed some coffee and added at bottling to taste.

    Plastic bucket HLT?

I BIAB and drain my mash into a plastic bucket to sparge. As others have mentioned, insulation would be a concern. I wouldn't worry about breaking the plastic from the heat. Plastic becomes more flexible and less brittle as it warms.

What was your Gatewaybeer to craft beer?

DFH 90 minute was the first IPA I had and it blew me away. After that I lucked upon a 4-pack of Founders Backwoods Bastard, having no idea what it was, and was again blown away. Now, I like beer.

Funny things you've overheard about beer

I was at a bar awhile back and noticed they had a "Session Imperial Pale Ale" on the menu. It was something like 4.8% ABV from a reputable local brewery so I had to ask the bartender about the conflict in the words. She taught me that contrary to popular belief, imperial means it's extra hoppy...

    American Stout Recipe

I'd personally go with roasted barley instead of the black patent for a stout. Althoigh I guess you could go either way. Sounds delicious though!

    Oak ing a stout

Not actually true - they say that it's an entirely different beer. I brewed an imperial stout awhile ago where I did this. I bottled 4 gallons and let the other gallon sit on oak and bourbon. I used 1 oz. of American oak chips and ~6 oz. of bourbon. Left for 2 weeks I think. For oak cubes, I...

    New Zealand DIPA

I've never used Nelson myself, but have enjoyed a few beers that showcased them. I've heard the same about them overpowering other hops which is part of the reason I have them listed at smaller quantities. I'd like a nice balance between the hops - would it be wise to cut them back even more...

    Pellicle Photo Collection

A split fermentation Berliner that I brewed recently had a wicked lacto fermentation the first 24 hours or so (harvested off of some grain) and apparently decided to form a nice round buttocks shape. Nice and veiny too. About an hour after I took this picture I guess the CO2 pushed all of the...

    New Zealand DIPA

Looking for some feedback on a DIPA recipe I've come up with. Never brewed the style, but bought a pound of Wakatu hops and wanted to put them to good use. I've already used a chunk of them in a Vienna SMaSH that is currently being dry hopped, and I'm digging the aroma/flavor already. Here's...

Seeking Recipe Recommendations – 2nd Batch

I'll second a Blonde Ale. Recipes are typically simple, hops are subdued, and if she's into some fruitiness they're great for that. I brew a citrus blonde where I just throw some lemon/orange zest in the boil, but I've heard of others using strawberries, blueberries, peaches, etc.
