    So, update... I went down to my chamber, opened the door to feel the carboy and move the chamber temperature probe about 2 inches (where you see the sudden drop in chamber temperature from 85F). Now the chamber temperature seems to be at a more appropriate level. Very odd, I cannot explain this.

    Notes from beersmith... Kiln dried malt darker than Pale Malt, but not as dark as Munich Malt Imparts a golden to orange color to the beer. I would try it. May get different malt flavor due to the kiln process.

    How long would you dry hop for? And would you stick with cascade hops? I usually dry hop after 7 - 10 days and still in the primary. Then cold crash and switch to the secondary for further settling.

    I use a 150w ceramic bulb from eBay. No issues for 1.5 years. My chamber is probably close to 5 cu ft.

    You can use a 1/2 conduit punch also, which are cheaper than 13/16 round ones. You can always buy a used punch on Craigslist or EBay for cheap too. I did this for my elements which take a 1-1/4 inch hole.
