    Oxygen in beer while siphoning

Trust these guys on the auto-siphon. Once you use your new auto-siphon you will look back and wonder, "What the &*#% was I doing trying to siphon beer with my mouth hole??"

Quick, need a low alcohol tolerance yeast

I haven't used honey, but a lower attenuating yeast sounds like a plan if you're trying to retain more of the sweetness.

Quick, need a low alcohol tolerance yeast

I would recommend checking out the specs wyeastlab.com or whitelabs.com assuming you're using liquid yeast. Sorry I don't have a more specific recommendation. What is your reason for desiring such a yeast? ETA: Just a quick look at the wyeast site shows their lager yeasts mostly falling in at...

    1800 IPA: Pseudo-historic IPA recipe

rex, I think this looks like a pretty good strategy overall. Are you going to at least tuck away a few bottles in storage to try a year or so out? Have you considered Burtonizing your water? I do remember from the book there were several descriptions of historic IPA's as "brilliant" and...

Is brewing beer or cider dangerous for my kitty?

What do you think is the real problem here, aside from the CO2? Try human interaction and you won't worry about these things.

    Christmas ideas

How bout a nice big old batch of chili? It's simple, cheap, and you can scale it to feed a crowd. I make a pretty mean turkey chili with white beans. I add some Belgian Wit and it really enhances the tomatoes and chillies. You can make a salad to go with it and do some sides & various toppings...

    Day 2 help

Just for future reference, if you're above your starting gravity but below your starting volume, it's totally acceptable to add extra water before pitching your yeast to get closer to your intended gravity/volume. ETA: Rmike VT beat me to it.

    Quick hop question

Just be sure to pay attention to AAU's for each hop and try to match up the IBU's based on your first run with the recipe.

    Simple labels are better.

ThorGod can you please explain the process of printing on paper bags? What kind of printer are you using. Nice, simple, clean designs.

    Oysters!

Let's keep the oyster talk going! Love oysters, and they're a fun food to pair with beer. As mentioned above, stout with oysters is a classic match. I had the opportunity to eat super-fresh Island Creek oysters paired with Harpoon's Island Creek Oyster Stout (part of their limited 100-barrel...

Bells Oatmeal Porter (Bells recipe of the month)

iBrewmaster gives me a similar number to your calc (1.051 @70%). Probably just some kind of typo unless they're basing it on ~85% efficiency or something. My guess is the typo is in the OG and they're shooting more on the higher end of a brown porter around 1.050-1.055. I think it's more...

    IPA ruin?

If I'm reading your post correctly it sounds like you moved you Columbus addition to the beginning of the boil and switched it with the Cascade. Your beer is by no means ruined. It might be slightly more bitter than intended, but it's an IPA so that's not exactly terrible. If you drink it and...
