    Oyster stouts have been 'round for some time but are on the rare side. Yard's Love Stout was originally an oyster stout.

    Verify the accuracy of your hydro as suggested & make sure that you're thoroughly mixing your wort and top off water before taking OG readings. With extract batches, if your water volumes are correct, you have no worries on the OG but you'll still find value in hydro measurements as you monitor...

    WLP029 - White Labs Kolsch

    http://whitelabs.com/beer/strains_wlp029.html I've been running that yest in the recommended 65 temp range and it's been a stable performer. Dropping down to 58-60 has likely slowed it down. I'd take a gravity reading and if you still have ground to cover, warm it up a tad.

    Aye! Keep it simple and you get a great dry stout. I'd add that my preference is to toss just a couple ounces of acid malt into the mix, keep my IBUs around 35 and my go-to yeast is WLP007 so you get a nice low finishing gravity but still retain a nice amount of body. I've dicked around...

    I generally just get my liquid yeast from my LHBS and haven't had any issue with their stock.
