    Whoa , this is interesting.

    My old HBS in Tampa, FL brewed beer and sold it. I would get my supplies and have a couple of pints. One of the brewers there eventually opened his own brewery in St Pete. This was in 2011-2012 timeframe.

    Stuck Fermentation... Help!

    In an earlier post, you stated your mash temp was 67-71 C (153-160F). If you started high 71C, your mash might have produced long-chain sugars which are hard to ferment. Did you try your beer after measuring SG? I assume it was sweet. You might never get to the expected FG. Just a thought.

    No. I just let the bag go up and down. I use cotton bags not nylon. I just recently bought a hop spider but haven't used it yet.

    Purging headspace when bottling

    You are all hurting my head and making homebrewing why to complicated. Purge the bottles with CO2, fill with beer and cap. Drink before oxidation sets in. But I think somewhere in the first 10 posts, your question was answered. No, don't leave the caps on loose or try it and see what happens.

    I live in Boston, so there is quite a few Breweries to choose from but the most recent one I visited was Granite Coast Brewing in Peabody, MA. I had their Dark Mild and Kolsch. Very good if I do say.

    I finished my first brew in about 6 mos this past Sunday. I have 5 gals of Dunkelweizen in my fermenter.

    Na, it will be gone by May. I’ve never aged it. I might bottle a couple of 22ozers just to see if it gets better.
